Here in Belgium a lot of people have the tradition to eat turkey on Christmas, like on Thanksgiving in the US.

It's basically the same menu as Thanksgiving again, but swapping out the turkey for ham instead. Your mom's birthday dinner looks great, especially the dessert. :-))
